How to beat highly defensive players?

I play OTB with a highly defensive player almost everyday, but he creates too drawish positions, when I attack his king he surrounds it with every piece he has, his first priority is to prevent me for playing what I want.

However I think there should be something wrong in what he does, but I'm not finding how to take advantage of it. He is very strong in the endgame so he trades pieces the first opportunity arises. What should I do to him?
@DaanNordenbos I don't play online with him only OTB, so I have no registered game, but I want to understand what does a pawn trade for improving? And in what section of the board should I trade pawns? Anyway I like the idea to trade pawns because he is very skillful with pawn play, that's his strongest point.
If he puts all his pieces near his king the other side of the board should be quite weak for him. So don't try to attack where he is strong but where he is weak.
But if he "balances" his pieces well it can be hard to beat. Super defensive play (a.k.a hedgehog) if done properly IS really hard to beat.
he puts all his pieces near his king only if I have put them there too, usually I am very good with piece placement but I can't do anything with it and he exchanges pieces one by one. He likes the stonewall too much, he blocks the position.
I can get half of the games though, but I think I deserve more because I have better piece development in many games.
If he plays for super solid positions and defends well piece development alone won't win you games. You will have to provoke weaknesses in his positions and then either exploit them in the middle game or if that's not possible, play a good endgame.
May be your attacks are bad? (premature, overextending, etc) and he takes advantage of that by launching a counterattack or entering a superior endgame.

If you are an attacking player by nature I would suggest following the two steps outline below.

1. Find out what openings your opponent plays. Go over your games against him and see what he tends to do.

2. Look at the games of Kasparov, Tal, Fischer, and other attackers who were famous for exploiting weaknesses. No one is an impenetrable defender. Even Petrosian lost his fair share of games. Chances are your opponent has a weakness that you need to figure out how to exploit.
